N.Y.C. First Earth Day

Forty years ago today, April 22, 1970, Fifth Avenue and 14th Streets in New York City fell silent.  No automobiles or buses zoomed, spewing out their toxic exhaust. Instead there were throngs of people  leisurely walking in the middle of the streets. I was one of those people.

Amazing Cuban Bean Soup

Ingredient list

  • 1 lb.of dry black beans, soak 3 hours or overnight
  • 3t. garlic minced
  • 1 bell pepper, chopped
  • 1/2 medium onion, chopped
  • 2TBLS. olive oil
  • apple cider vinegar, a quick dash
  • salt to taste
