Ingredients
3 large (preferably heirloom) tomatoes
1/2 small onion diced
2 T. sugar
2 T. white vinegar
salt and fresh ground pepper to taste
water to cover
Cut the tomat o into bite-sized chunks and toss with diced onion. In a 2-cup measuring cup, mix sugar and vinegar and add water to fill the cup. Pour over tomato/onion mixture and season with salt and pepper. Chill for 2 hours. Serve with slotted spoon or (my favorite) serve in bowls with the vinegar dressing.
Easy, low-cal, yummy and refreshing. My mom used to make this for us with our home-grown tomatoes. We always called this dish "Polish Tomatoes" but that's probably only because we were Polish.
