Watermelon and Feta Salad

 I don't remember where I originally saw this recipe but it is simple, delicious, and refreshing on a hot summer day. There are no exact measurements, which is part of the beauty of the dish--anyone can make it with ease. It can be served on a plate as in the photograph, but to make it more elegant I have served it in a martini glass both as a first course and as a dessert. It is a versatile addition to any menu.

 

Watermelon Salad with Feta, Mint and Lime

Watermelon, cut into cubes

Feta cheese, crumbled

Mint leaves, chiffonade ( roll and cut thinly. They will be in threads.)

Lime

Put watermelon cubes in a bowl. Sprinkle  with crumbled feta cheese and  mint over the top. Squeeze a lime wedge over all.

Christine: Thanks for the link. Great article! Obviously, this wonderful pairing of feta and watermelon is a classic. It's so refreshing here in California's central valley where I live with temps often over 100 in the summer.
All the versions of this look equally delicious to me. Off to the market for feta and mint as soon as work is done for the day!
I must have been thinking of this yesterday---watermelon was 19 cents a pound and feta was on special. Cheap Bastid is going to make this.
Yum! I discovered this combination earlier this summer and it's become a favorite.

I love the combination. I learned this from the Greeks, who drizzle the dish with olive oil and use Greek basil instead of the mint (though I am loving the mint here).
