Peanut Butter & Potato Chip Cookies

There were lots of leftover potato chips from this weekend and the kids had nothing for the lunchbox, so I dug out this old recipe from long ago. I don't remember where it came from, probably the back of a chip bag. In any case, it really is a good recipe and one that amazed the kids. "This has CHIPS in it?" They loved it!

Cream:

2 cups brown sugar

1/2 cup shortening, (I used butter)

2 eggs

Add:

3/4 cup peanut butter, (all I could find was this healthy stuff)

Add:

1 3/4 cups flour

1 t. baking soda

1 t. vanilla

Mix well. Dough will be somewhat stiff.

Blend in:

1 cup crushed potato chips

1 cup diced walnuts

1 package chocolate chips

Drop by heaping teaspoonfuls onto ungreased baking sheets.

Bake at 350 degrees for 8-10 minutes.

Remove from sheet and cool. Makes 4 dozen scrumptious cookies!

Your recipe look delish, I will need to try it. Thank you for sharing!
It IS a good recipe and one you have to try!
It's funny that I have real cholesterol-laden butter with the Smart Balance peanut butter, but, that's what I had available. I guess it would even out the calories!
Ooo! Thanks- I'm always looking for a new recipe to try on my foodie friends! Yummy I could go for one of those cookies right now!
Have a great day- Oh! and great mixer!
Thanks, Nini and Splendidly Average,
Yes, I do love my Kitchen Aid mixer, I got it years ago for free when we were using American Express and they gave out all those great free points. Have a good day and hope you try these out!
Peanut butter and walnuts and chocolate chips and potato chips!! Oh my God!!!!!
Debbie, would you mind making some up for me ........ and sending your handiwork down the internnet. Sounds really good.
AtHomePilgrim and JonMagee,
Sure wish the internet would allow for sending this in a pm, now, wouldn't that be great?
thanks for the comments and have a wonderful day!
Mmmmm, nice! I am making this tomorrow. I will let you know how it came out!
This looks like something I could almost do.
Steve, you could do it. I know you can!
Kids must have been elated and I bet they didn't get traded for something else at lunch time. But potato chips -- sounds a bit weird.

I'll stick to my chocolate; my baking days are behind me.
gal80, it's always fun to make some cookies and you can just bake off one tray full and freeze the rest of the dough, or, eat it raw. Yumm!
OMG! Peanut butter, potato chips and chocolate chips... I can't let my husband know about you... he'd totally leave me for you.
iamsurly,
just bake the guy some, then! and do it quick before he does find out.
(i'm locking the door just in case. i'll leave a batch out on the porch for him with some milk and a note to return home to you.)
