Peanut Butter & Potato Chip Cookies
There were lots of leftover potato chips from this weekend and the kids had nothing for the lunchbox, so I dug out this old recipe from long ago. I don't remember where it came from, probably the back of a chip bag. In any case, it really is a good recipe and one that amazed the kids. "This has CHIPS in it?" They loved it!
Cream:
2 cups brown sugar
1/2 cup shortening, (I used butter)
2 eggs
Add:
3/4 cup peanut butter, (all I could find was this healthy stuff)
Add:
1 3/4 cups flour
1 t. baking soda
1 t. vanilla
Mix well. Dough will be somewhat stiff.
Blend in:
1 cup crushed potato chips
1 cup diced walnuts
1 package chocolate chips

Drop by heaping teaspoonfuls onto ungreased baking sheets.
Bake at 350 degrees for 8-10 minutes.
Remove from sheet and cool. Makes 4 dozen scrumptious cookies!

It's funny that I have real cholesterol-laden butter with the Smart Balance peanut butter, but, that's what I had available. I guess it would even out the calories!
