My new chocolate pudding recipe:
So easy and so delicious that I'll never bother with buying cook 'n serve or instant. Really.
I got it from Foodnetwork.com, the first result in a search for chocolate pudding. It called for whole milk, but I used skim and it was still awesome. I also cut down on the sugar to make it less sweet and more chocolatey. Next time, I'll toss in a little instant coffee powder, too.
- 2 cups milk
- 1/3 cup sugar
- 1/3 cup cocoa powder
- 4 teaspoons cornstarch
- 3 egg yolks
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
Put 1 1/2 cups of the milk, the sugar, and the cocoa in a small saucepan. Bring to simmer, over medium-high heat. Remove from heat.
Meanwhile, whisk the remaining 1/2 cup of milk, cornstarch, salt, egg yolks, and vanilla in a bowl. Gradually whisk the hot milk into the egg mixture. Return to the saucepan and cook over medium-high heat whisking constantly, until the pudding comes to a full boil. Reduce the heat to maintain a simmer, and continue whisking until thick, about 2 or 3 minutes more.
Pour into a serving bowl, or mini bowls, and let cool to room remperature. Then, refgrigerate until firm, at least 4 hours.
I'll also prepare some strawberries to go with it next time. The hubby and I were really dying for them.
